Tekeyla Lime Pie

Inspired by the 1999 Key West Race Week festivities, we modified our favorite dessert recipe for the key lime pie.

This is a real key lime pie recipe, not the bright green refrigerator type you've probably seen elsewhere. Once you taste it, you'll know the difference forever.

1 pre-baked pie shell (10" by 2" pie pan)
2 14-ounce cans sweetened condensed milk
4 egg yolks
1 cup key lime juice (regular lime juice can be substituted)
1/4 cup tequila
1 tbsp. lime rind - finely chopped
1/2 tsp. salt

Mix together all ingredients. Mixture will thicken as the lime juice reacts with the other ingredients. Pour into your pre-baked pie shell and bake in oven for 25 to 30 minutes at 350 degrees. Let cool, then refrigerate. Best served cool. Delicious as is, or dress it up with whipped cream and fresh fruit.
