Help-Cruising GIWW from Texas to Florida

Here's my plan. I have a 1980 25' Hunter, shoal draft. I want to sail it along the Gulf Intracoastal Water Way to Florida and eventually end up in the Keys. I am in no hurry and have no real interest in doing a lot of bluewater cruising. I plan to meander along, anchor out often and stop along at the few marinas along the way. I am eager and open to any advice.

I would like to go in August, which I know is during hurricane season. Would I be putting myself in real danger if I stay in the GIWW and don't mind walking away from the boat?

What kind of provisioning should I prepare? I expect it to take several weeks?

Going solo. Anything I should know?

What kind of navigation equipment should I take along. I already have paper charts and the knowledge to use them?

Done a lot of sailing, but never longer than a weekend trip. Any help would be appreciated.

And walking is what you be doing with no car and a hurricane bearing down on you. This sounds like a bad plan. Where would you "walk" to? You really need to think about this clearly.
