Re: small sailboat rentals?

I don't know the Melbourne area but I have visited the Lake Worth area many times.
There is a fairly upscale Hyatt hotel right on the ocean side beach that has a waterfront program that included one of the newer small Hobie catamarans. Of course their staff would probably sh!t bricks if you decide to head out more than a half mile into the Atlantic. There may be a similar hotel in the Melbourne area.

Using the internet I find that this place claims to have a 27' Hunter that they will rent for $200/half a day: Boat Rental Prices | Jet Ski Rental Pricing - Melbourne, FL | Cocoa Beach | Titusville | Viera | Rockledge | Cape Canaveral | Port Canaveral | Palm Bay | Orlando | 321

This place offers a 1/2 day charter for $300: Tranquility Excursions, IncSailing Charters - Home

I'm sorry to say this but Florida seems to cater mostly to the goin' fishin' crowd more than blow boater types. If you want a jet ski, fishin' boat, gator air boat tour you will find it, easily. If you want a small sailboat like a 420 you might be outa luck.
