Annealing Copper Washers

In order to soften used copper washers so that they will seal properly you heat them cherry red then cool them down. Is the proper cooling method to air cool or to quench in water?

If you want them soft, keep cherry red for a few minutes, then let air cool slowly. If hard, keep cherry red for few minutes, then quench in water.
