Personally, I would wait. You never know, you might be able to successfully lap the seat back into shape (we do this on big steam plant valves on the sub all the time) but if the seat is too badly damaged or there is some other problem with the seacock, then you're in a position where you have an irreparable hole filled only with a wooden plug. As long as the valve is solidly assembled and it looks like the problem's not going to get any worse, I would be tempted to wait until haul-out.
Of course, these things do only get worse with time, not better. Might be wise to pay the couple hundred for a haulout, fix the valve, and get dropped back in - sucks to spend the season with a nagging little voice in the back of your head saying "you're sinking" over and over and over ... and trust me, that voice will be loudest when you're away from the boat, trying to fall asleep.
