Hyd power on a sailboat?

I was kind of kicking this idea around. Elect clutch driven Hyd pump to run the watermaker...My 2K inverter will not start the motor and I dont want to go any smaller. I could also use it for a hyd powered windlass. I have the room and the parts and install would be under 1K....Anyone try this?
Incase you havn't noticed, Im home recouping from surgery and have way too much time on my hands right now...
