Winterizing - Need advice

I purchased my first sailboat only a few weeks ago and have been enjoying the tail end of the Chesapeake Bay sailing season. I am now thinking about winterizing my boat. Being new to sailing I want to ensure I cover everything. I am planning to keep my boat, a Pearson 30 w/ universal Diesel, in the water as long as possible before hauling it for the winter.

I am looking for information on what systems should/must be winterized and any other potential gotcha''s to look out for. What should be done, if anything, to the electrical and mechanical systems, engine, head, fresh water system, rigging, etc.
