Painting
I painted my entire exterior last year, using Interlux products. I selected Perfection (a 2-part paint) for the hull and most of the deck. I used Interdeck, a 1 part paint, for the non-skid.
If you will go to Interlux's helpful website, you will find answers to all your questions, short training videos, etc.

It's a big job. My 32' boat took about 2 months to paint, but I stripped nearly all of the hardware, including the teak rubrail (which alone took about a week to remove and replace due to some ornery fasteners that had rusted and were not very easy to reach).
I think you can do a passable job by leaving the hardware on, but a much better job removing it. In addition, most of your hardware probably needs to be re-bedded unless it's been done in the not too distant past.
