Sole Replacement

A friend is in the process of buying a Almond 31. The PO started removing the sole of teak and holly but didn't finish.

For those who have come before.

It runs under some cabinetry. I have a choice of removing the settee to get the sole out our cutting it flush.
Leaving the glass floor or replacing with new T+H or, carpet or some plastic material.

What do you know about this job?
