Polar plots

Could someone suggest a tutorial on how to read these things?

Are you talking about the polars of your boat??

IOf its that you should have a vertical line in the middle that shows the apparent wind.

Bellow the center line you have boat speed that starts on the loewer half and goes around to the left.

The horizontal line shows windspeed.

You chose the angle of sail, the apparent wind, pich the round line and that gives your boat speed.
