Adding a staysail to a sloop doesn't actually make it a cutter, it makes it a double headsail sloop. I've had several sloops and cutters over the last 50-years and on the cutters the mast is set further back on the boat.On cutters 30-feet and under the mast comes down into the main salon, where on sloops it is generally just forward of the head bulkhead.
Your Bristol will sail better if you dump the staysail rig and stay with the sloop configuration the boat was designed to be.
