Jousting?

I'm trying to find information on this sailing sport I read once. Basically, 2 sailboat try to cut each other off until one of them has to turn in such a way that it'll be fully into the wind, dead inthe water.

Basically, a form of "playing chicken". With rules.

Anybody ever heard of this? What is it called?

Lucas, this seem very close to what I read! Looks like it's an offshoot of dial-up. Basically, the same techniques, but with no other goal then to make the other boat turn head to wind and lose all speed. There's no actual racing afterward. Basically, "reset" and do it again. I guess points are scored every time an oponent comes to a halt or near halt.
