I've seen non-marinized ovens used before in boats...they all seem to rust fairly quickly at places like hinges, etc, which aren't stainless steel.
But as far as using it on a boat or in a cabin, I don't see why it wouldn't work....almost all boat ovens are non-vented. They are talking strictly about the oven's using of cabin oxygen and the creating carbon monoxide during the combustive process...resulting in a low oxygen, CO rich environment....the same you'd have for any oven that's non-vented. Simple solution, open a port if you're going to bake for a long time.
EDIT: I'd like to get a hold of one of those LITTLE glass-doored, gimballed ovens made by Origo. No longer made, I think. They used the same type of safe Origo burner as the very popular Origo 3000 stove.
