Are there any colors that you should never use? I've heard that using blue is a bad omen/luck? Is this true?

My bottom is a rust red, and I'm going to try to keep the color when I have it repainted next month. I don't think blue would look good on my boat. Most of the boats in my marina are blue, though.

White, actually, a lot whiter than my topsides...

Makes it a lot easier to clean. Typically, the darker it is, the more copper content it will have. Making it have better anti fouling properties.

Change the colour every time I do a bottom job. That way when I start to see the previous colour showing I know it's time to haul/

In theory, perhaps. In my experience however, for a given product line, I have never noticed any difference in anti fouling performance from one color to the next.

Color = whatever is on sale when it's time for a bottom job. Although, I try to alternate colors, as has been mentioned in previous posts.
