Sailing Quote Search

Perhaps someone here can help me with a sailing quote. I heard part of it recently in a movie.
It went something like...."give me a tall ship with sails and show me a horizon..."
I'm wondering who said it or wrote it and how the rest of it goes.
If it helps the movie was an old Star Trek movie "The Final Frontier"
