Does anyone have any experience sailing a small canoe? Maybe using a small canoe rigged to sail, with leeboards, would be a cheap and easy option. I've seen pictures of canoes rigged for sailing and it looks pretty straightforward. That might make good tender for a larger boat, and it would certainly be easy to paddle without the sail up.

My main concern with this idea is that in choppy water, the canoe may not be deep enough and water could splash in easily and I'd constantly be bailing. I've used a canoe in the sound in the Outer Banks and if the wind isn't calm (and it's often not), a canoe just isn't deep enough.
