Got the hero3 for xmas and have taken a few sailing vids with it. Nothing worthy of posting yet though. The Hero3 offers a fairly professional editing and color correction workflow. You can shoot natively at 2.7k (1440p) then crop and/or zoom down to 1080p to re-frame your shot and eliminate anything on the edges you don't want. The extra frame size also makes it clean to apply lens compensation to eliminate the fish eye effect and apply camera stabilization to remove the shaky handheld look.

Shooting in protune mode with camraw for white balance gives you the highest data rate and maximizes your ability to color correct.

For editing you'll need the free cineform studio. It's important to run your protune quality video through it's import and conversion step and allow it to apply the protune color profile. You then bring these files (avi or mov) into your favorite video editing software. I use Adobe Premiere. It's easy to spend an hour shooting video and a week correcting, conforming, and editing...
