Building 16' Dory w/ simple Sail Rig

I'm new to sailing and am heading back South to the Mobile Bay area.
What I am looking for is a simple sail rig I can handle myself.

The boat is just under 16 foot and I'm waiting for the epoxy and fiberglass. I don't want to catch so much wind as to overwhelm my lack of skills but then I want enough as to enjoy some quickness.

Any ideas? there is one idea from redbarnboats on youtube that looks pretty simple but maybe there are others.

My boat project is on my webpage under BUILDING DULCINEA http://talesof5rivers.guerrillaflyfi...g_dulcinea.jpg

Gaff rig might be the way ta go. Classic Dory lines and easy to fabricate. NOt too tall; but enuff sail area to get ya along.
