New member, newbie looking for advice

I've recently started sailing (been going for a couple of months now) in the DC area and am absolutely in love with it. So far, I've started with small keelboats (sunfish and flying scot), any touts on what else to try out?

In my attempt to start learning as much as I can, I've found salinet to be very helpful- props to the community.

To start off, I wanted to post a question that I've been thinking about and would love to get your thoughts. In mid to heavy winds (13+ kt), should I be doing a controlled or a flying gybe in small boats like the ones above? So far I've done flying gybes. If I were to try a controlled gybe, wouldn't I risk capsizing if I bring the mainsheet in to do the gybe?
