Bob,
My SJ21 has cam cleats mounted right next to the sliding hatch. They face inward but sitting in front of the traveler I can reach them and trim them. I have the winches mounted in the same spot that you do. There is another San Juan nearby that I have seen that has winches mounted in the location we have and then he mounted another set further aft on the coamings. I don't know when he uses which set. I always use my smallest jib in Charleston (at least so far) so I can't tell you which way to route your Genoa sheets. My plan when I went to use it was that they should run outside the shrouds to the tracks on your coamings and then forward to the winches.
The link that someone posted before is a good one. There are a lot more experienced people on there that can tell you your answers specific to this boat. I am posting a question on there soon as I can't figure out what some of the hardware on my boom is supposed to be used for.
I have been getting a lot of good hints setting it up to single-hand there as well. I have a tiller extension so I can reasonably sit up next to the cabin and steer/control the sheets except my boat is set up for racing and the traveler crosses the cockpit about mid length. Now If I can figure out how to step the mast solo, I will be in there!
