If you want a really good sailing camera, I'd recommend the Olympus 1030 SW, which is waterproof to 33' or so...and shock resistant. 10.1 MP and a 3.6x optical zoom. Not too bad. Its what I always carry, since its small enough to pocket.
as for the DSLR... if you're going to sailing school, leave the camera home...concentrate on learning instead...
The Complete Sailor is a great book...
As for gloves, I generally have and use JetPilot PWC gloves. They're thin, comfortable, and almost indestructible.
I'd second the Columbia clothing, but note that it has UPF factor. UPF 50 means that it blocks over 97% of UV light. SPF is for sunscreen. Please note that a lot of clothing, especially cotton-based clothes have basically no UPF when wet...and you'll cook almost as badly as if you had no shirt at all.

You know what the first rule of sailing is? ...Love. You can learn all the math in the 'verse, but you take
a boat to the sea you don't love, she'll shake you off just as sure as the turning of the worlds. Love keeps
her going when she oughta fall down, tells you she's hurting 'fore she keens. Makes her a home.

Well after taking everyone's suggestions, getting my passport finalized, searching and finding the Columbia UPF clothing (Under Armor and Nike also have lines of UPF clothing), buying sailing gloves and the recommended sun screen, setting up some tanning sessions for the next couple weeks, buying my Tilley, buying some recommended reading material and studying for the last two weeks, setting up my airline tickets, contacting the sailing school... Well I found out that I have to postpone my vacation. i will not say cancel because I have my heart set on doing this but I might have to wait a few months till I can go.
I am so depressed right now...

We go quite a bit down there, here are some recommendations...
VSVI... The airport is small, a $10 dollar cab ride will get you to Charlotte Amalie (We usually stay at the Marriott in Frenchmens Reef, we do it on points, a nice hotel, nice views) Charlotte Amalie is a nice town, good shopping for jewerly (Jewels downtown Idetha is the manager, a great gal). Defiently check out Megans Bay a great place...
Not sure where you are going...but everything is basically around the block so to speak: St Johns is quiet, quite pretty, not much to do
St. Marteen, I higly reccomend you stay out of the french side, espeically in the evening as the place has really deteroirated. 6 people off a Wind Star cruise were held up at gun point this year and robbed, just down from the tender dock.
St Bart is quite nice....The Buccaneer restaurant on the water is always scenic...
Jost Van Dyke- YOU HAVE TO GO TO THE SOGGY DOLLAR FOR THE ORIGINAL PAIN KILLER...NO EXCUSES...Foxy's is also quite scenic especially at night
BVI: Pussers bar in the marina is a personal favorite, the outside deck is quite nice, water pressure in the showers is a little low, but no problem using the facilities, very nice people.
Bitter End, nice place to dock and walk around...mostly a hotel, but interesting to see, Saba Island is right across the channel, also interesting
St. Croix: If you get down there, a number of good spots: Buccaneer bar (Wheres your Buccaneer, on your bucking head)...
You most definitely need your passport, you will have a great time, a worldwide top 5 cruising spot)

I went to Reef Runner Sailing in Key Largo. Excellent instructor, and Reef Runner in Panama City once won ASA school of the year.
