I know it's a drive, but go to Orange Coast College Sailing center in Newport. One of the best and cheapest sailing schools in the country. They've got everything from dinghies to a 65' monster that goes offshore every summer. It's been 20 years, but when I first started sailing, I drove an hour there every weekend and took every class they had, passed all the ASA tests with flying colors without taking their much more expensive courses and have raced and chartered all over the world. Start with solid basics, you'll get that in small boats, when you are good sailor, then you can learn cruising, anchoring, navigation, etc.
