Just to follow up: I talked to my instructor, and it turns out that he took the boat out this past week and had the same problem; he's pretty sure it's due to some sort of damage to the centerboard. The rope that retracts it is pretty chewed, and he thinks it may be stuck partially retracted.
On the plus side, it's good to know we weren't just screwing up, but on the down side, I'm going to have to find somewhere else to sail if I want anything bigger than a Sunfish.
