We have spent 5 summers in the Sea of Cortez so I may be able to give you our thoughts. Please note: All summer, not unlike those that say "oh we have spent the summer in the sea" and then we find out they left the boat on the hard in June and went home.
Don Juan is rather deep and when lots of boats pack in and 99% are on all chain rode you may find yourself taking up a huge area of real estate with mostly nylon rode. Some part of the anchorage is heavily weed encrusted so that presents another problem.
My suggestion for an anchor type is either a Manson Supreme or Rocna. Both of those types have been gaining popularity over the years.
The most important tip I can give you when running for a hurricane hole is to get there very early and stake out your ground. Coming in late will get you a very deep part of the bay and not a great position.

Hurricane Season anchor for Sea of Cortez
We're planning on spending hurricane season in the Northern end of the Sea of Cortez, and I was hoping to get some first hand info on bottom types and anchor recommendations, specifically for Puerto Don Juan (Bahia de los Angeles) and Puerto Gonzaga. A boat we're considering buying (28.5' Pearson Triton) currently has a 25# CQR with 60' of 5/16" chain. Given that we'll be buying at least one, if not two more anchors, we'd like to take to opportunity to match the new anchors to the areas where they'll be tested the most (the anchorages listed above). Thanks
