I personally think you''re going overboard with those choices. I too am a spirted cruiser but some of the fabrics you listed are really race sails.
My boat is currently all Quantum so I am prejudiced there however I would look at using cruising rather than racing laminates. Most are polyester films. Tri radial sails are great and with the right material will hold there shape with no issue.
I would also entertain a 90-100% #3 for sailing when the winds pipes up. Rolling your 135 is really not the same.

Sails for a Tartan 4100???
Making my decision this week on new sails for a Tartan 4100. Main sail is fully batten, and the Jib is a 135% on harken mk II furling, and will be adding an asymmetrical cruisng spinnakeras well.
I have narrowed my choices down to: Hood 7.7oz Vektron for main and jib, or UK Tape drive for main and Jib, or Quantum Carbon Tri-Radial main and jib in bainbridge carbon CLC 95 cloth.
The boat will be used mainly for coastal cruising, but I do like spirted performace as well.
Please give me your opinions, based on your experience with any of these sails,
