You are right Parmeson is one of those cheeses that does keep well without refrigeration.
In fact when provisioning it is best to look at those fresh fruits and vegetables that do last particularly if you do not have refrigeration. They are well documented so I will not go into that here.
Annie Hill and the Pardeys give some excellent advice on those things. The truth is you will eventually find those things out yourself with experimentation but it is always nice to get the advice early to save time and disappointment.
I will say though that how you eat ultimately is a matter of personal taste and experimentation. It is also affected by the size of boat you are in and therefore the facilities and utensils that you have available.
THe sailers on dhows and junks have been doing it on a shoestring for years just by keeping it simple. That''s the key, so too is variety and that is where your imagination and knowledge of what you and your crew like comes into it. Even gourmets can get sick of the same or similar thing for too long.
I know that when I travel and am committed to hotel food for too long on land I get sick of that too. It happens.

a good food idea
For the cruising sailor who like to live well. Try buying Parmesan rinds at your grocery store ( WHole foods sell them, among others) THey are cheap to buy, do not need refrigeration, last forever, and are much better than the ground up dust that is called parmesan in many stores.
