SVCarolena For fruit salsa, jicama salsa is very good, particularly over grilled chicken or fish:

peeled and chopped jicama
cucumber, peeled and chopped
fresh cilantro, chopped
fresh lime juice
salt to taste

The jicama should hold up well on the boat until it is ready to be peeled and chopped.

Whampoa No worries TB just trying to get a few more selections here. Just pulling your chain man.

I agree the fresh fruit is nice when you can get it and we do that when we can. As you know I'm sure, fresh fruit is tough sometimes to get or keep aboard and thats where the dried fruits come in handy.

Sorry John, wasn't my intent to stomp over your recipe - just never tried candied fruit added to salsa . . . it's probably a kick. I've always made it with fresh fruit, local grown or tropical.

Of course you've tried salsas over grilled food, such as minced mango, papaya and pineapple, tossed with a bit of squeezed lime, cilantro and garlic over grilled fish. My reaction was based upon the thought of adding sweet, candy fruit to the mix - just doesn't sit well with me.

Whampoa TB I would love to hear more about all those local salsas you have experienced! Feel free to add the recipes for any and all of those you can remember.

Before you blow off the first post you should give it a try. If it helps you can just read the recipe as dried fruits. It won't harm you or make you soft!

I didn't eat my grandmother's fruitcake either.

This is a one-man company run by a great guy, with some incredible hot products. They've got flavor--not just heat--but I give all fair warning that some of his stuff has made south asians cry mama. If the bottle says "use sparingly" don't make the mistake of going "plonk" like it was tobasco. The stuff that is rated "10" could easily be used as a weapon.

Jim will put together any special order you can imagine, he's one of those folks who takes great pride in both product and service. (And no, I don't get any commission from him, he's just on my short list of good folks to do repeat business with.)

Aside from using Cholula hot sauce (from Mexico), that's exactly how I've made my salsa for years - spent quite a few winters in Mexico and became very intimate with local salsas. I don't think they even know what "candied fruit" is. Reminds me of my aunt's holiday fruit cake (Yucko!).

I thought I was the only one who adds minced veggies, grilled over mesquite smoked coals.

sailingdog But guys, the stuff that makes it spicy is good for you and helps the cardiac system...provided it doesn't kill you first. Of course, some of you didn't grow up eating things like my grandma's kimchi.
