For fruit salsa, jicama salsa is very good, particularly over grilled chicken or fish:
peeled and chopped jicama
cucumber, peeled and chopped
fresh cilantro, chopped
fresh lime juice
salt to taste
The jicama should hold up well on the boat until it is ready to be peeled and chopped.

I agree the fresh fruit is nice when you can get it and we do that when we can. As you know I'm sure, fresh fruit is tough sometimes to get or keep aboard and thats where the dried fruits come in handy.

TB I would love to hear more about all those local salsas you have experienced! Feel free to add the recipes for any and all of those you can remember.
Before you blow off the first post you should give it a try. If it helps you can just read the recipe as dried fruits. It won't harm you or make you soft!
I didn't eat my grandmother's fruitcake either.

But guys, the stuff that makes it spicy is good for you and helps the cardiac system...provided it doesn't kill you first. Of course, some of you didn't grow up eating things like my grandma's kimchi.
