It does say the settees sleep 2 - I guess they were thinking kids or midgets.
They sure did a good job though.
You should be able to cut a hole in a bulkhead (as long as it has rounded corners) without a structural issue. My starboard settee has foot space in the hanging locker forward as it is short as well.
How deep is the sink? If it is shallow enough and the drain was not in the way that might work.
I wouldn't move the stove or re-model the head. Both would be quite disruptive and I see no easy solution there.
That leaves the starboard main bulkhead or the sink area.

Any ideas on best way to extend either settee (or both)? The pictures might show it better
but I think my options are:
1) Cut out bulkhead into hanging locker on starboard (I lose the locker space
and am not sure if the bulkhead is structural).
2) Cut out bulkhead into head on port (this would necessitate remodel of
head--possible losing the sink altogether? And weakening the bulkhead--these are
1/2 marine ply).
3) Move the stove or raise it up?
4) Move or relocate the sink?
I'm buying a Columbia 28 that has been gutted and rebuilt--a nice job was done
but there are no sea berths (I'm 6'0" and the settees are both 5'0"). Any ideas
on best way to extend either settee (or both)?
Also, any input as to the suitability of this boat's potential as a long range
cruiser (as in Hawaii and beyond)? It was supposedly refitted with that purpose
in mind but I'm a little concerned about the suitability of the design (fin
keel, spade rudder, slight tendency to broach under spinnaker, H deck joint, too
much chopper gun, etc.).
