Shnool, I've had the same experience as you. I folded the sails on deck (actually, in the cockpit) without a problem on the C25.

Looks like you got good advice already. We have taken our 150 genoa (roller furling) down on deck and done a decent job flaking and folding... I suppose it may take a bit of practice to get used to the idiosyncracies of your deck and you may not do quite the perfect job you are used to spreading everything out on the lawn somewhere, but you'll be OK.

A main would not be that hard with a loose footed sail, Flake in on the boom, tie sail ties around it, take off the tack clew, slugs etc, off into a bag! also need to take out the battens......

One can flake jibs as mentioned, all pretty easy once you get used to it, and do it a few times, usually screwed up the first few times. but gets easier ea time. 2-3 people do make it easier to flake on deck. Then use sail ties, into a sausage bag, or roll up into a what I will call the normal sail bag!

I drop my genoa, sometimes it pretty much flakes itself (hanked on which helps), sometimes I give it a bit of a tidy up. Fold it in thirds and into the bag. Main stays on the boom.

My sausage bag is a little longer than one third of the foot of the genoa. The sausage bag is designed so that when setting the sail you can affix the tack, the halyard, and the sheets while the bag is zipped closed. So when folding the sail into the sausage bag you need to be mindful that these three points will be accessible. Folding the sai into the bag is a two person task. As suggested above tie the forward end of the opened sausage bag to the stem fitting before you start to drop the sail and lay the open bag aft, checking to see that there are not twists. The person at the tack should ease the halyard while folding 16*18" pleats along the luff. The second person following the lead of the person at the tack folds pleats starting at the clew and moving forward as necessary until the entire sail is folded on the deck. Then the aft person goes two-thirds the way aft, gathers the sail at this point, and bring the two-thirds aft point forward to the tack. Then zip the bag closed. The tack will be at the front of the bag, the clew at the aft end of the bag, and the head will protrude from an aperture one or two feet aft of the tack. Disconnect the halyard, sheets, and tack fitting. If you wish, you can fold the bagged sail into a brick and secure the brick shape with the webbing straps on the outside of the bag.

Ah, gives me a thought. This really depends on your sail layout.

Our main (581 sf) is very small, by comparison to the genny (866 sf). The foot on the genny is about 26 feet long and can't find that much unobstructed space. By comparison, our main's foot is only 19 ft and will layout on the foredeck between the mast and pulpit.

A fractional rig with a jib, for example, might be a very different experience.

I must be blessed with a large/wide foredeck because I always fold/roll sails on deck, at anchor or at the dock. I solo sail nearly 9 times outta 10.

Last time we took down our 135 genoa on the deck, I swore I would just cut it away next time and buy another.

We were on our last sail a few years back and stayed out on anchor. I was possessed to drop the sail after coffee in the morning, with no wind, and motor back. We have to bring it inside the stays to have enough room.

When you do a bad job, like we did above, it just gets worse as you move it around. Ours exploded into a mess that wouldn't fit down the companionway. Find a dock for an hour!!

I read in a sailing magazine a tip somebody recommended for flaking a sail on deck shorthanded. He uses those inexpensive spring clamps, available at hardware stores, to hold the flakes in place as he works one end of the sail and then the other. Never tried it myself--just passing on the info.
