This is one that was made by a fellow co-worker at the firehouse. I really like it and I think it tastes as well as, or better than, what you get at a good mexican restaurant(and I'm not talking Chili's). Its a Salsa, not a Pico de Gallo. So making it in a food processor is a plus, and easier. One of the best parts is that it is easy to make.
Ingredients:
-One can chopped or stewed mexican style tomatos
-One can Chipotle chilis in adobo sauce
-One half white onion (red can be used for more "bite")
-one half bunch cilantro
-two limes
-two cloves garlic
-salt
Cut the onion into chunks and put in the processor with the garlic.
Give it a whirl until it is just about diced(not too much, you still have more to chop in there). Add the leaves from half the cilantro, the juice from one lime, and a single medium size chili from the can of Chipotle chilis and the can of tomatos. Give it another whirl, but again, not too much, you don't want to make soup like the Picante garbage they sell at the market, its salsa. Add about a teaspoon of salt and more lime to taste. If its not hot enough for ya, you can add another chipotle chili, or a jalapeno.
Make your own chips by using corn tortillas, vegetable oil, and a skillet.
I recommend Negra Modelo with lime, or margaritas!
