All this talk of trailer hitches brings up a longstanding complaint of mine: Why don't boats have trailer hitches?
If our boat had a trailer hitch, I could use our trailer hitch bicycle rack, plug it in to the 2" receiver at the stern, and haul five bikes along.

Good point. If your boat had a trailer hitch, stupid stinkpotters would be less inclined to run up your tail at anchor.

Eeeew! Slippery when wet?
I guess that is what happens when you can't see it because it is 'camo' and using it while moving is just asking for trouble.
Who needs a holding tank? I'll mount one of those on the stern rail and hope that it all holds up to 'adult activities' while removing the head and plumbing.
