One of my favorite Vancouver restaurants to bring visitors to is Shabusen, and excellent sushi and yakiniku house. Every table has a barbeque or two built into the table. You order meats, they are brought raw but marinated and very thinly sliced, and then you toss them on the grill
. Best of all, they have an all-you-can-eat option for $20/person which includes yakiniku and sushi.
Shabusen is on Burrard between Robson and Georgia, right in the heart of downtown.
My favorite Thai place is in Yaletown, "Simply Thai" on the corner of Davie and Hamilton, but that might be because it's a block from my office :P
Somebody mentioned Steveston... if you happen to go, I recommend halibut and chips from Dave's Fish and Chips.
Another place I haven't been to in a while but would recommend is the Kino Cafe on Cambie street. I can't recall the cuisine but they have very good live flamenco groups. Fairly close to downtown.
For more culture, I would recommend the UBC opera company. Tickets are usually cheaper than the "professionals" but the singers are very good. UBC might be a nice place to visit in general; good view of the Straight of Georgia, and probably good opportunities for art exhibits as well.
