Concerning Tritons, how much weight in gear and stores would be considered "maximum" for a typical fitted east coast made Triton with 18hp motor?

500 pounds? 1000? 1500? in general.

The Pearson Triton has a quite small 'immersion constant' for loading because of its narrow beam and large overhangs.

The Immersion rating ( or pounds per inch) is about 620 lb. per additional INCH that the waterline will 'sink'.
So, whatever your current configuration, for every 620 lb. of gear the Triton will sink 1" deeper into the water.
Of course with such large overhangs most of the additional stowage 'should' be near the middle of the boat and not in the 'ends'; ... as if you put a lot of weight in such a boat, especially in the bow or stern, with large overhangs and narrow beam, the boat will pitch (hobby-horse) quite heavily.
