Beets a Beet where I come from, of course there's yellow beets, red beets, watermelon beets, etc etc.

Mahi Mahi is typically used for Dolphin fish not flipper to avoid the confusion...apparently not everywhere

Sauteed Beet greens are good with Pan Seared Dolphinfish fillet.
Maybe a little brown butter vinaigrette.

Beets are great just peeled and sliced very thin and added to a salad. No need to cook them. They're also nice just steamed with a bit of butter and salt and pepper.
