Mint Julep

1/3 cup water
2/3 cup sugar
3 bunches mint leaves
1 bottle bourbon

Make a mint flavored simple syrup by boiling water and sugar with two bunches of roughly torn and bruised mint in large sauce pot. Boil just until the sugar dissolves completely. Cool and strain the mint out of mixture.
Add bottle of whisky to the infusion. Stuff the empty whisky bottle with last bunch of fresh mint leaves and fill with the syrup/whiskey mixture.

Moisten rim of glass & line with sugar for the girlies.

Actually I do drink all the beer I want. St. Pauli, Becks, and Hini all make a non-alcohol and they are surprising. I've even turned hard core beer guzzlin' fishin' buddies on to it. Course non of them gave up the real stuff, but they liked it.
I don't miss drinking at all ,I miss the taste of a DRY and dirty vodka martini. Pour vodka over ice, open vermouth bottle and wave it over the glass(bottum down) a big ol' spoon of the juice of the olive,,, oh my my.

When we are out cruising in the summer...we allways go to sea to see the sunset...every day...even if we have to use the engine..

We then stop....my wife prepares the best CAIPIRINHA in the whole World...I drink 2 or 3 and allways found my slip at the marina we are then, smaller than when we left it....

Ice cold Caipirinha, with lime.....priceless....

Just had this one in Dallas...

3 shots (or more) of Cap'n Morgan
2 shots of Apricot Liqueur or Peach Schnappes (Apricot is better)
1 shot of Midori
Fill rest of glass with Orange Juice

I heard it called a "Neon Tower" since the Midori gives it a little green tinge. If you add more Captain Morgans (which we usually do), just increase both the Apricot Liqueur and the Midori, and decrease the OJ . We usually don't measure the amounts - just mix to taste. This combination is REALLY good and VERY lethal.

Brazil is Guyana's big neighbour to the south. There is a great Brazilian restaurant here in Georgetown and they serve the greatest Caipirinhas. I can't wait to have them on the boat! But...two is a line not to be crossed lightly, three, well ok.....any more and you better be at anchor and sleep it off.....

This is an old recipe from my grandfather:

One 700ml bottle of the cheapest brandy you can find.

One orange with an oily skin.

1/2 cup of castor sugar (powdered sugar)

One empty wine bottle keep cork

One coffee filter.

METHOD: pour brandy into wine bottle (it’s bigger than the brandy bottle) peel orange using a potato peeler only taking the rind (no pith), put rind in with brandy. Cork bottle put away for 1-2 weeks. (Wait) put sugar in a jug and pour brandy through coffee filter stir until sugar is dissolved, pour into a clean bottle cork and leave for 2 weeks. Now drink from a shot glass or brandy balloon. Enjoy.

Okay,

It's almost Summer atleast on the east coast. I know we've all had tons of Margaritas but THIS ONE IS DA BOMB. So good they can get you in trouble.
I make these from scratch:

3/4 cup tequila (any decent one will do)
1 cup fresh squeezed lemon juice (yes lemon, not lime)
1/2 cup fresh squeezed orange juice
1/3 cup Cointreau
1/2 cup fine grain sugar

-mix together in pitcher until sugar is desolved
-add ice just enough to chill
-stir in 10oz club soda
and for goodness sakes no blender!!!
-salt or not
Of course, you can alter the proportions to taste.
