Every time I think about racing food I think about lasagna. My neighbor, the next slip over you see is a big racer and every year come grand prix (the biggest race in the area) he brags endlessley about how his crew are feasting on lasagna and garlic bread while everyone else is eating cold sandwiches. It's hard to adequately paint the picture except to say that the captain I race with calls him the "that lasagna guy" .

It does seem like a good idea though. Buy premade hormel lasagna, shove it in the oven. Buy premade garlic bread, slice open the bag lengthwise and put it over the back of the stove (where the heat vents out) and you have seaming hot bread too.

One of my favorites from being a little kid on a power boat in the San Juans is "boatsman's pie". Heat up hashbrown potatoes in a pot or tall sided frying pan with a lid. Once they're cooked turn the heat down to the lowest setting possible. Add several pre scrambled eggs over the top of the potatoes (don't touch them or stir) and put the lid on. On the super LOW heat the lid will cook the eggs from the top while the pan cooks them from the bottom. When the eggs are done add some grated cheese to the top, which will melt, and serve like slices of pie.

It's easy because it's in one pot with a lid the whole time and is kind of like a breakfast quiche. Great with tabasco. Reheats really well too.
