From a wood working perspective you've covered all the bases; you seem to have as good a handle on what and how as the rest of us.
Bending plywood (for the curve in your sole) is not as easy as ribs, but I suspect you know that. It does bend in one direction rather easily if you laminate thin layers. Rather than steaming which can be hard for large flat panels I might suggest an ammonia bath, I read somewhere that works.
Vberth, are you using it as a berth or storage or both? Does your oday 30 have the fiberglass step cutout right in the center? those make nice storage lockers if you enclose them, either with a door or with drawers.
On my Hunter 31 I put PVC pipes (1/2 inch) wrapped in canvas like a pipe berth that were 1 foot wide, 1 foot from the ceiling on both bulkheadsin the v-berth, they did not interfere with sleeping, and let me store large bulky lightweight items (like sails) out of the way so the berth was available. Admittedly the PVC was kinda 'guy ish' but hey, I'm a guy. Every second not spent fabricating an attractive solution was a second spent sailing.
