Remodeling an older Sailboat

Thanks to all. I'm still in the research phase, and as saildog is pointed in his comments his intent is not lost on me. Once, I've got a handle on how I plan to proceed, then my questions will get more targeted. Since my experience has been limited to lake sailing, I will be limited to the costal and near costal sailing once I get there. Again, thanks for the education, I look forward to reading more of your experiences with the blue water world.
