I don't know about one hand knot tying, but I did watch a Coastie once pick up a piece of 30' 3/4 inch line and held it each end. He flipped his wrists about a dozens times and when he stopped he had a perfect towing bridle with a bowline tied in each end.
I also know a retired NYC fireboat engineer who ties bowlines behind his back with his eyes closed. It sounds easier than it is.
