Another option is to use a larger bit and drill the "head" off the screw...pull the cam cleat off and then use a vice grip to remove the standing shank of the screw...

Really wasn't that bad of a project...took three months, but most of that was "waiting" time to dry out warm up and harden up between coats...

Sanded the sole with 60 grit, took off the lumps and bumps, cut off the loose fibers and generally smoothed things out...
Then a fairing coat of epoxy over all... I added a little white colorant...
