I posted up a link earlier to Evans. They make a waterless coolant that is biodegradable and non-toxic. You run it straight and it's boiling point is high enough that you do not need to pressurize...

I personally do not see any good reason to go with an oil cooled engine over a fresh water (antifreeze) cooled engine. I know that you would need a LOT more air circulation on an air to oil cooling...
