My wife and I own Pelican, 462 #077, and have sailed her from Puerto Vallerta MX to Puget Sound, where we are living.

Great boat, she's a sloop rig, shallow Draft (5'3")....

If the above doesn't work, try the valve cartridge. Remove the handle, then usually a crescent wrench to back off and make sure there is no trash in the valve seat area.

My one pot would be a 6 liter (QT) pressure cooker, which can be used for almost anything, including safely boiling water in rough seas to fill a Thermos (Stainless Steel, fo course...)

If I only had one pot it would be a 6 liter(quart) Pressure Cooker
It will cut your galley time and stove fuel consumption by 90%.
