Wimpy drill press will work if you use a rapid, light, plunging motion. I recently cut several 6" x 1/2" G10 backing plates this way. Use a bi-metal hole saw.

Definitely use wire reinforced hose.

I pulled my DST800 transducer today. Far less water ingress than seen in your video. I was surprised to see how well the flapper worked. Minor geyser 2-3 inches high.

I just replaced vinyl coated wire and bullet blocks with small diameter Amsteel and Antal low friction rings. Light, simple, strong ... works great.

Consider using the Beaglebone Black. Its got an on-board ADC. Generally better equipped for interfacing to real world versus the Pi.

Still not sure what you are trying to accomplish here. ...

Still not clear on what you are trying to do. An analog sensor to NMEA 0183 converter? Or an analog sensor to NMEA 2000 converter? If the later, how do you intend to obtain the NMEA 2000 protocol...

That said ... it is not my expectation that the DST800 flap will stop the water...
