I usually like to set/raise with a slightly dipped pole / taught luff so that the luff of the symm is more stable initially; then, once raised, I then 'from the cockpit' will 'diggle' with the pole...

Boats were built to Knud Reimers designs (including the Tumlaren class) Worldwide. So it might have been built in Australia.
