I also thought about those options, but ended up using a high end oak cabinet grade plywood. Plenty of strength and easy to find. My logic was that if I keep the wood dry the more expensive okume...

You are right about the carpet. I was being delicate. It was an off-white carpet with a foam backing glued in place. I might smooth with filler before painting and leave the carpet off.

I often go out in winds 5kts through 15kts, but prefer 7 and above. Less than 5 or over 20kts is not worth it. I sail a 23K.
