We have a 12' Escape Rhumba sailing dinghy that we too launch and retrieve "off the beach" (generally, however, when we're vacationing at the Sanibel Harbor Resort in Punta Rassa). I have overcome the issue of a too high trailer for the boat by using a large inflatable fender under the bow of the boat. My (much) better half, or daughter, slips the fender under the bow while I press down on the stern. The fender lifts the bow up, above the bunk boards, and rolls under the boat as I push it forward onto the trailer. Our fender is 18" in diameter and 48" long and can be inflated with a dinghy foot pump, or better, a 12 volt pressure pump, in a few minutes, and then deflated and stored when one's finished with the task.
