Do keep in mind that should the insurance company "total" the boat, you probably will not be able to get insurance on that hull again. Insurance companies keep very good records of this stuff to prevent future fraud.
After they pay you off, they own the boat and will be looking for anybody to give them money for it, so they don't have to scrap it at their expense. You would be much better off to take their money and buy another boat.
