We have just purchased a 1971 Pearson 30, and one of the first things my wife asked me is if I could build a floor in the salon so that it is flat, since we will be sailing with a toddler and a crawling infant it makes sense, but will it interfere with anything? If not what should I construct it out of?

That part that isn't flat is the shape of the hull. You would have to build a riser and raise the cabin sole which could interfere with a bunch of things......

Can you afford the loss of headroom?

Honestly I think kids are pretty adaptable, and even if the sole was 'flat' it wouldn't always be level anyway, would it?

I'd expect that the loss of headroom would be the major sticking point of raising the sole that much.
