Howdy,
Headed up to the mountains tomorrow to winterize my Santana 22 fixed keel. Not going to get out on the water again this season.

It is already on dry storage but I need to pull the outboard. It’s an 8hp evenrude. Wife will be there with me but pulling a 65-70lbs motor is going to prove to be a challenge.

Any thoughts on how to best do this?

Is the mast rigged? If so, use the boom as a crane, using the halyard as a topping lift and mainsheet as the lifting/lowering block

If rig is down and is on a trailer. Got any low tree branches you can get the stern close enough too?use the branch as your crane..
Not sure what you mean by use the halyard as a topping lift

Last Fall, we got a 14' fishing boat with a 15hp on it. Motor weighs about 100lbs., and my back won't put up with that crap anymore.

I picked up couple pulleys at the hardware store and rigged a block and tackle that I suspend from my garage ceiling. Makes the weight manageable. I can highly recommend this approach, but the trick is to have a place where you can suspend it.
